HOW TO MAKE BIRYANI AT HOME

Ingredients to make Chicken Biryani - In the table below, you are told the ingredients of making Chicken Biryani.

3.  Boneless Chicken ½ kg
4.  Ginger garlic paste 1 tbsp
5.  Black Pepper 4-5
6.  Cinnamon Stick 2
7.  Bay leaf 3-4
8.  Large cardamom 2-3
9.  Green cardamom 2-3
10. Long 3-4
11. Green chillies cut between 2
12. Turmeric 1 tsp
13. Lemon juice 2 tbsp
14. Red chili powder 1 tsp
15. Curd ½ cup
16. Cumin 2 tsp
17. To fry oil
18. Onions 2-3 waxed
19. Capsicum ½ cup finely chopped
20. Carrot ½ cup finely chopped
21. Salt to taste
22. Ghee 1 tbsp
23. Gram Masala 1 tsp
24. Cornflour 2 tbsp
24. Coriander chopped 2 tbsp finely
25. Mint: 1 tbsp finely chopped
26. Fresh Cream ½ cup
27. Milk 2 tbsp
28. A pinch of saffron
29. Rose water 1 tbsp

-Wash the rice thoroughly and keep it for 15 minutes.

-Cut the chicken into small size equal.

-Now to marinate, add 1 tbsp ginger garlic paste, a pinch of turmeric, green chillies, curd, lemon juice,   red chillies, garamsala and mix well. 

-Now put the chicken in it and apply the paste well around it. Keep it in freeze for 1 hour to marinate.

-Place the waxed onions on a plate, add cornflow from above and mix well.

-Now to fry the onion, heat the oil in a pan, fry the onion in it.

-Make all the spices tied in a cloth, make a bundle, now heat water in a big pot, add rice and put a little salt and a spice bundle.

-Let it cook for 5 to 10 minutes then drain the extra water. Do not cook it too much, stop it only when the grain is slightly hard.

-Now heat ghee in a pan, add cumin, ginger garlic paste and fry it, now add raw onion and roast it for 1-2 minutes.

-Now add carrot capsicum to it and cook 1-2. Now add red chilli turmeric to it.

-Add salt and marinate chicken to it and cook for 5-10 minutes. Finally add fresh cream, finely  chopped  coriander and mint and let it cool. If it is too thick, then add a little water to it.

-Now take saffron solution in milk and keep it aside.

-Now take a thick bottom pot, place a layer of chicken spices in it, put fried onion, saffron milk, 1 tsp oil on it. Now place a layer of rice on it.

-Prepare 1-2 such layers.

-Now cover the utensil with foil or clean cloth from above. Cover the lid from the top. (You can also cover it with dough instead of cloth)

-Now heat a thick griddle and place this pot on it.

-Let it cook for 15 to 20 minutes on medium heat, this method is called dum dena. The more you dab it in a slow flame, the more it will taste. You can also keep it in microwave instead of pan. Cover in a microwave and keep it for 10-15 min.

-Turn off the gas, leave it covered for some time, then open, pour a few drops of rose water from above and serve it hot.

#Serve Biryani along with Vegetable Raita. To make it, churn the curd properly, now add fine cucumber, onion, tomato, chilli, add salt over it and finally decorate with green coriander.

#Tip - If you do not eat chicken, you can add lots of vegetables like potatoes, cabbage, carrots, capsicum to the biryani. You marinate the chicken instead.

In earlier times, when there was no gas, it was cooked slowly in the stove, which made it taste authentic. Now it is cooked in gas which does not taste like it but still tastes good. It is very important to give strength to biryani. It takes time to make Biryani, but it is very tasty to eat. Whenever you think of making it, make it by taking time, only then you can give all the flavors well.
