TIKKI RECIPE
MATERIAL
Boiled potatoes about 6Peppermint chopped
Chopped green chili
Red chilly
Black Salt
Plain salt
½ teaspoon lemon juice
Rice flour
METHOD
To make potato tikki, first of all, put boiled and cold potatoes in a bowl and add chopped mint. You can also use chopped coriander if you want. After this, add chopped green chillies, red chillies, black salt, plain salt, half a teaspoon lemon juice, rice flour and mix it well. If you want, you can also use semolina instead of rice flour. But before using it, stir the semolina once in the mixer so that it becomes fine. You mix it well. It will be prepared like a flour. Now you leave it like this for 15-20 minutes. Now make a round round in your hands by taking a little mixture from this mixture, then press it slightly with light hands. Similarly prepare the tikkis from all the mixture.
Now take a pan and add some oil to it. When it gets hot, add tikkis and cook it on low heat. Make sure that you bake the tikkis on low heat. This will make your tikki inside and make it very crispy. When it gets roasted from one side and turns brown, then turn it over and bake it from the other side. When it gets roasted, then take it out in a plate and serve it with green chutney.
Note: Although tikkis also use breadcrums, cornflour, etc., but this does not give the real taste of tikkis and makes tikkis too heavy.
